Cheesy Jalapeño-Bacon Scrambled Eggs

This is a hearty and flavorful breakfast dish made from a combination of scrambled eggs, crispy bacon, sliced jalapeno, fresh chives, and shredded sharp cheddar cheese. The dish is easy to prepare, with bacon cooked in a skillet until crispy, before being drained and mixed with sliced jalapeno, and scrambled eggs seasoned with salt and pepper. The eggs are cooked until lightly set, before being broken up and mixed with fresh chives, and topped with shredded cheddar cheese.


  • 6 large eggs
  • 4 slices of bacon
  • 1 small jalapeño pepper, sliced and seeds removed
  • 1/4 cup fresh chives, chopped
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Prepare Ingredients:
    • Cut bacon into 1-inch pieces.
    • Slice jalapeño pepper, ensuring seeds are removed.
    • Chop fresh chives.
  2. Cook Bacon:
    • In a medium skillet over medium-high heat, cook bacon pieces until crisp. Remove cooked bacon and set aside, then drain excess fat from the skillet, leaving a small amount for the eggs.
  3. Prepare Eggs:
    • While bacon is cooking, crack eggs into a bowl and beat them until well scrambled.
    • Season with salt and pepper.
  4. Cook Jalapeño:
    • In the same skillet with the reserved bacon fat, add sliced jalapeños. Sauté for about 2 minutes until they begin to soften.
  5. Add Eggs to Skillet:
    • Pour the seasoned, scrambled eggs over the sautéed jalapeños. Allow eggs to set for a moment, then gently stir with a spatula, folding in the cooked bacon as the eggs begin to set.
  6. Add Chives and Cheese:
    • Once eggs are mostly cooked but still moist, stir in half of the chopped chives.
    • Remove skillet from heat.
  7. Serve:
    • Plate the scrambled eggs. While they’re still hot, sprinkle shredded sharp cheddar cheese over the top, allowing it to melt into the eggs. Garnish with the remaining chives and serve immediately.

Serving Suggestion:

  • Serve the cheesy jalapeño-bacon scrambled eggs with toast or as a filling for breakfast burritos. Adjust cheese and jalapeño to taste for a perfect spicy-cheesy balance!

Cut the bacon into one inch pieces, slice the jalapeno removing the seeds, and chop the fresh chives.

Add the bacon to a skillet over med-high heat.

While the bacon is cooking, crack the eggs in a bowl and scramble with a fork. Stir in the salt and pepper.

Once the bacon is cooked, drain the fat and add the jalapeno. Stir a couple minutes.

Add the scrambled egg mix over medium heat and let cook a couple minutes. Then lightly break up and stir with a spatula.

Add half the chives and stir removing from heat.

Plate the eggs and top with shredded cheddar cheese and remaining chives.
