For the Pasta
6 ounces dry rotini pasta
1 pound ground beef
1 tablespoon olive oil
Salt and pepper, to taste
1 cup shredded lettuce
1 cup shredded cheddar cheese
½ cup diced pickles
½ cup finely chopped onions
1 tablespoon sesame seeds (for garnish)

For the Big Mac Sauce
1/2 cup mayonnaise
4 tablespoons dill pickle relish
2 tablespoons yellow mustard
1 tsp white vinegar
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika (or smoked paprika if you prefer)
Salt and pepper to taste

Preparation

  • Bring a large pot of salted water to a boil.
  • Measure and prep toppings: shred the lettuce and cheese, dice the pickles, and finely chop the onions.
  • In a small bowl, whisk together mayonnaise, dill pickle relish, yellow mustard, white vinegar, garlic powder, onion powder, paprika, salt, and pepper until smooth. Set the sauce aside.

Cooking

  • Cook the rotini in boiling water until al dente. Drain and reserve about 1 cup of pasta water.
  • Heat olive oil in a large skillet over medium heat. Add ground beef, season with salt and pepper, and cook until browned and crumbled. Drain excess grease if needed.
  • Add the cooked pasta directly to the skillet with the beef and toss to combine.
  • Stir in shredded cheddar so it melts slightly into the warm pasta.
  • Pour the Big Mac sauce over the mixture and toss well until evenly coated. Add a splash of reserved pasta water if needed to loosen the sauce.
  • Warm everything together for a few minutes until heated through.

Serving

  • Remove from heat and gently fold in shredded lettuce, diced pickles, and onions.
  • Spoon into bowls while hot.
  • Sprinkle sesame seeds over the top for that classic burger flavor.
  • Serve immediately.
