For the Roasted Sweet Potatoes

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

Prepare the Chicken Fritters

Finely chop or grind the chicken breasts and place them in a large mixing bowl. Add eggs, flour, Parmesan cheese, mozzarella cheese, mayonnaise, sour cream, minced garlic, paprika, black pepper, salt, and parsley (or green onions). Mix well until fully combined. The mixture should hold together; if too loose, add a bit more flour.

Prepare the Roasted Sweet Potatoes

Preheat the oven to 400°F (200°C). In a large bowl, toss cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread the sweet potatoes in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and lightly browned.

Cook the Fritters

Heat vegetable oil in a large skillet over medium heat. Scoop about 2 tablespoons of the chicken mixture and form into small patties. Fry the patties in the hot oil, cooking for 3-4 minutes on each side until golden brown and cooked through. Drain on paper towels.

Make the Chipotle Lime Crema

In a small bowl, combine sour cream, minced chipotle peppers, and lime juice. Stir until smooth. Add salt to taste and adjust lime juice or chipotle for desired heat.

Serve

Serve the crispy chicken fritters with the chipotle lime crema drizzled on top or on the side for dipping. Plate the roasted sweet potatoes alongside the fritters as a flavorful and hearty side dish.
