Ingredients

20 ounces boneless chicken thighs
1 tbsp olive oil
Salt & pepper, to taste
12 oz fresh green beans, trimmed

For the Honey Mustard Sauce

3 tbsp Dijon mustard
2 tbsp honey
1 tbsp whole grain mustard (optional for texture)
1 tbsp apple cider vinegar or lemon juice
2 cloves garlic, minced
1 tbsp olive oil
Salt & pepper, to taste

Instructions

Preheat & Prep: Preheat oven to 400°F (200°C) if baking, or set up a large skillet for stovetop. Whisk together the honey mustard sauce in a small bowl.

Cook the Chicken: Season chicken thighs with salt and pepper. Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear thighs skin-side down (if bone-in) for 3–4 minutes per side until golden.

Add Sauce & Finish: Pour the honey mustard sauce over the chicken.

For oven: transfer skillet and bake 15–20 minutes, until chicken reaches 165°F.

For stovetop: reduce heat to low, cover, and simmer 15–18 minutes, spooning sauce over occasionally.

Cook the Green Beans: Meanwhile, steam or sauté green beans for 5–7 minutes until crisp-tender. Season with salt, pepper, and a drizzle of olive oil or butter.

Serve: Plate chicken with green beans, spoon extra sauce over both, and garnish with thyme or parsley if desired.

Preheat oven to 400°F (200°C) if baking or prepare a large skillet if cooking stovetop. Whisk together all honey mustard sauce ingredients in a small bowl.

Season chicken thighs with salt and pepper. Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear chicken thighs until golden, about 3-4 minutes per side.

Pour honey mustard sauce over the chicken. If using the oven: transfer skillet to oven and bake for 15-20 minutes until chicken is cooked through (165°F internal temp). If stovetop only: reduce heat to low, cover, and simmer until chicken is fully cooked (about 15-18 minutes), spooning sauce over the chicken occasionally.

While the chicken cooks, steam or sauté green beans until crisp-tender (about 5-7 minutes). Season with salt, pepper, and a drizzle of olive oil or butter.

Plate chicken thighs with green beans on the side. Spoon extra honey mustard sauce from the pan over the chicken and beans.
