Apple Cinnamon Walnut Steel-Cut Oatmeal

Ingredients
1 cup steel-cut oats
3 cups water
2 medium apples, cored and diced (Fuji or Honeycrisp)
1 teaspoon cinnamon
A pinch of salt
Toppings
½ cup chopped walnuts
Drizzle of maple syrup
Instructions
Prepare the Oats
Bring the 3 cups of water to a boil in a medium saucepan. Add the steel-cut oats and a pinch of salt to the boiling water, stir, reduce the heat to low, and cover. Allow to simmer for 20-25 minutes, stirring occasionally, until the oats are tender and have absorbed most of the water.
Add the Apples and Cinnamon
When the oats are about halfway through cooking (10-12 minutes in), add the diced apples and cinnamon to the saucepan. Stir well to combine.
Cook Until Done
Continue cooking on low heat, stirring occasionally, until the oats are fully cooked and creamy, and the apples are tender but not mushy, about another 10-15 minutes.
Serve with Toppings
Once done, remove from heat and let the oatmeal sit for a couple of minutes to thicken slightly. Serve the oatmeal in bowls, topped generously with chopped walnuts, a drizzle of maple syrup, and additional fresh apple pieces if desired.
