  • Tortilla chips
  • 1/2 pound Jimmy Dean sage pork sausage
  • 1/2 cup pepperoni, sliced in half
  • 1 finely diced jalapeno
  • 1 finely diced shallot
  • 1/4 cup fresh chopped green onions
  • 2.25 ounce can of sliced black olives

Nacho Cheese Sauce

  • 8 slices of American cheese
  • 2 ounces of cream cheese
  • 2 tablespoons butter
  • 2 tablespoons heavy cream
  • 1/4 cup whole milk
  • 2 teaspoons hot sauce


Prepare the Meat Topping:

  • In a large skillet over medium heat, add the sage pork sausage, sliced pepperoni, diced jalapeño, and diced shallot.
  • Cook the meat mixture, stirring occasionally, for about 10 minutes, or until the sausage is thoroughly cooked and the ingredients are well combined. Remove from heat and set aside.

Make the Nacho Cheese Sauce:

  • In a medium saucepan, combine the American cheese, cream cheese, butter, whole milk, heavy cream, and hot sauce.
  • Cook over medium heat, stirring occasionally, until the cheeses have melted and the sauce is smooth and creamy. If the sauce is too thick, adjust by adding a little more milk or cream to reach your desired consistency. Remove from heat.

Assemble the Nachos:

  • Lay out tortilla chips on a serving platter or large dish.
  • Evenly spread the meat mixture over the chips.
  • Generously pour the nacho cheese sauce over the meat and chips.
