Blueberry Topping

1 cup fresh or frozen blueberries
2 tbsp sugar (or maple syrup)
1 tbsp lemon juice
¼ tsp ground cinnamon
¼ cup water

Crepes

1 cup all-purpose flour
2 large eggs
1 cup milk
1 ripe banana, mashed
¼ tsp salt
1 tbsp sugar
1 tsp vanilla extract
2 tbsp melted butter (plus extra for cooking)

Preparation

  • Rinse blueberries (if fresh) and measure sugar or maple syrup, lemon juice, cinnamon, and water.
  • Mash the banana until smooth.
  • Melt butter and let cool slightly.
  • Measure all crêpe ingredients so they’re ready to mix.

Blueberry Topping

  • In a small saucepan, combine blueberries, sugar (or maple syrup), lemon juice, cinnamon, and water.
  • Cook over medium heat 5–7 minutes, stirring occasionally, until berries soften and the sauce thickens.
  • Remove from heat and keep warm.

Crêpes

  • In a mixing bowl, whisk flour, eggs, milk, mashed banana, salt, sugar, vanilla, and melted butter until smooth.
  • Let batter rest 10–15 minutes.
  • Heat a nonstick skillet over medium heat and lightly butter the surface.
  • Pour about ¼ cup batter into the pan and swirl to form a thin, even layer.
  • Cook 1–2 minutes until lightly golden underneath, flip, and cook 1 minute more.
  • Repeat with remaining batter, stacking finished crêpes on a plate.

Serving

  • Fold or roll crêpes onto plates.
  • Spoon warm blueberry topping over each.
  • Add powdered sugar or whipped cream if desired and serve immediately.
