Preparation

  • Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.
  • In a medium bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  • In a separate large bowl, whisk the egg until smooth.
  • Add the milk and melted butter to the egg and whisk until fully combined.

Cooking

  • Gradually stir the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  • Gently fold in the dried cranberries and chopped pecans until evenly distributed.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 35–40 minutes, until the top is golden and a toothpick inserted in the center comes out clean.

Serving

  • Let the bread cool in the pan for about 15 minutes, then transfer to a rack or board.
  • Slice and serve warm or at room temperature.
