Fresh
1 pound Jimmy Dean’s sage ground pork sausage
2 large sweet potatoes, peeled and cubed
2 large apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
1 medium onion, finely chopped
2 cloves garlic, minced
Fresh parsley, chopped (for garnish)

Pantry
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Salt and pepper, to taste
1 tablespoon olive oil
1/2 cup chicken broth or apple cider (for added flavor)

Preparation

  • Finely chop the onion and mince the garlic.
  • Peel and cube the sweet potatoes.
  • Peel, core, and dice the apples.
  • Chop the parsley for garnish.
  • Preheat the oven.

Cooking

  • In a large skillet over medium heat, cook the sausage, breaking it apart as it browns. Once fully cooked, remove and set aside.
  • In the same skillet, add olive oil. Sauté the onion until softened, then add the garlic and cook briefly until fragrant.
  • Stir in the sweet potatoes and cook until they begin to soften.
  • Add the apples, cinnamon, nutmeg, salt, and pepper. Cook until the apples start to soften and everything is lightly caramelized.
  • Return the sausage to the skillet and stir to combine. Pour in the broth or apple cider, scraping up any browned bits.
  • Transfer the mixture to a greased casserole dish, cover with foil, and bake until the sweet potatoes are tender.

Serving

  • Let rest briefly after baking.
  • Sprinkle with fresh parsley.
  • Serve warm as a hearty main or side dish.
