Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda

- 1 ripe banana, mashed
- 1/2 cup milk
- 2 tablespoons melted butter
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 2 eggs, separated
Instructions
Prepare the Dry Ingredients
In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
Mix the Wet Ingredients
In another bowl, mash the banana until smooth. Add the milk, melted butter, sugar, and vanilla extract, and mix until combined.
Prepare the Eggs
Separate the egg yolks from the egg whites. Add the egg yolks to the banana mixture and mix well. In a separate bowl, whisk the egg whites until soft peaks form.
Combine and Mix
Pour the banana mixture into the dry ingredients and stir until just combined. Gently fold the whipped egg whites into the batter, being careful not to overmix.
Cook the Waffles
Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease the waffle iron with a bit of butter or non-stick spray. Pour the batter onto the waffle iron and cook until golden brown, about 3-5 minutes depending on your waffle iron. Repeat with the remaining batter to make the remaining waffle.
