Add eggs, flour, Parmesan cheese, mozzarella cheese, mayonnaise, sour cream, minced garlic, paprika, black pepper, salt, and parsley (or green onions). Mix well until fully combined. The mixture should hold together; if too loose, add a bit more flour.
Prepare the Roasted Sweet Potatoes
Preheat the oven to 400°F (200°C). In a large bowl, toss cubed sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
