Ingredients
For the Pizza Crust
1 cup warm water (105-110°F)
1 tablespoon white sugar
1 tablespoon active dry yeast
1 tablespoon olive oil
2 1/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon Italian seasoning
For the Honey BBQ Sauce
1/2 cup ketchup
2 tablespoons honey
2 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon liquid smoke
1 teaspoon hot pepper sauce
For the Toppings
8 slices of thick-cut bacon, diced
2 chicken breasts, diced
1 red onion, diced
8 ounces mozzarella cheese, shredded
4 ounces sharp cheddar cheese, shredded
2 tablespoons Cajun seasoning
Instructions
Make the Crust: In a mixing bowl, combine warm water, sugar, and yeast; let stand 5 minutes until frothy. Add olive oil, flour, salt, and Italian seasoning. Mix with a dough hook until sticky and elastic, adding flour as needed. Let rise 15 minutes. Roll out on a floured surface, then transfer to an oiled pizza pan and shape to fit.
Prepare the Sauce: In a small saucepan, combine Honey BBQ sauce ingredients. Simmer on low until slightly thickened, then set aside to cool.
Cook the Toppings: In a skillet over medium-high heat, cook diced bacon and chicken for about 5 minutes, covered. Stir in Cajun seasoning and continue cooking until chicken is done and bacon is crisp, about 5 more minutes.
Assemble & Bake: Preheat oven to 400°F (200°C). Spread sauce over the prepared crust, then top with half the cheddar. Add the bacon and chicken, sprinkle on red onion, then finish with mozzarella and the remaining cheddar. Bake 25 minutes, until cheese is golden and bubbly. Let cool briefly before slicing.
Add the warm water, sugar, and yeast to a mixing bowl and stir. Let it sit about 5 minutes or it becomes frothy.
Add the olive oil, flour, and salt. Mix together with a dough hook about 5 minutes until the dough becomes sticky, adding flour a tablespoon at a time as needed to firm up the dough to become elastic. Add the Italian seasoning while mixing the dough.
Form the dough into a ball and leave in the mixing bowl to rise about 15 minutes while preparing the sauce and toppings.
Roll the dough out on a lightly floured surface. Brush a pizza pan with oil and form the dough in the pan.
Stir the sauce ingredients together in a saucepan and simmer on low heat until slightly thickened. Remove from heat to let cool.
Dice the bacon and chicken breasts into bite size pieces.
Add the bacon and chicken to a skillet and heat to med-high. Let cook covered about 5 minutes.
Add the Cajun seasoning and stir in. Cook about 5 minutes more until the chicken is cooked and bacon is becoming crisp.
Dice 1 red onion.
Spread the honey BBQ sauce evenly over the dough.
Add half of the shredded cheddar cheese.
Add the chicken and bacon.
Add the red onion over top.
Add the shredded mozzarella and the other half of the cheddar.
