Ingredients
20 ounces boneless chicken thighs
1 tbsp olive oil
Salt & pepper, to taste
12 oz fresh green beans, trimmed
For the Honey Mustard Sauce
3 tbsp Dijon mustard
2 tbsp honey
1 tbsp whole grain mustard (optional for texture)
1 tbsp apple cider vinegar or lemon juice
2 cloves garlic, minced
1 tbsp olive oil
Salt & pepper, to taste
Instructions
Preheat and Prep: Preheat oven to 400°F (200°C) if baking or prepare a large skillet if cooking stovetop. Whisk together all honey mustard sauce ingredients in a small bowl.
Season and Cook the Chicken: Season chicken thighs with salt and pepper. Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear chicken thighs until golden, about 3-4 minutes per side.
Add the Sauce: Pour honey mustard sauce over the chicken. If using the oven: transfer skillet to oven and bake for 15-20 minutes until chicken is cooked through (165°F internal temp). If stovetop only: reduce heat to low, cover, and simmer until chicken is fully cooked (about 15-18 minutes), spooning sauce over the chicken occasionally.
Cook the Green Beans: While the chicken cooks, steam or sauté green beans until crisp-tender (about 5-7 minutes). Season with salt, pepper, and a drizzle of olive oil or butter.
Finish & Serve: Plate chicken thighs with green beans on the side. Spoon extra honey mustard sauce from the pan over the chicken and beans.
Optional: Garnish with fresh herbs like thyme or parsley.
