Ingredients

For the Stir-Fry
200g (7 oz) chow mein noodles or thin spaghetti
1 pound of ground beef 85/15
12 tablespoons vegetable oil, divided
2 cloves garlic, minced
½ cup julienned carrots
½ cup sliced bell peppers (red, green, or both)
½ cup sliced mushrooms
2 green onions, sliced

For the Sauce
2 tablespoons soy sauce
1 tablespoon oyster sauce (or hoisin sauce for a sweeter option)
1 tablespoon water or chicken broth
1 teaspoon sesame oil
1 teaspoon sugar
½ teaspoon ground black pepper

Instructions

Cook the Noodles
Boil noodles according to package directions. Drain, rinse under cold water, and toss lightly with oil to prevent sticking. Set aside.

Make the Sauce
In a small bowl, whisk soy sauce, oyster sauce, water (or broth), sesame oil, sugar, and black pepper. Set aside.

Cook the Beef
Heat 1 tbsp vegetable oil in a wok or large pan over medium-high. Add ground beef, breaking it apart, and cook until browned. Remove from wok and set aside.

Stir-Fry the Vegetables
In the same wok, add the remaining 1 tbsp oil. Sauté garlic for 30 seconds until fragrant. Add carrots, bell peppers, and mushrooms; stir-fry 2–3 minutes until just tender. Stir in green onions and cook 2 more minutes.

Combine
Return beef to the wok. Add noodles and sauce. Toss everything together until evenly coated and heated through.

Serve
Divide among bowls and garnish with extra green onions or sesame seeds if desired.

Add the carrots, bell peppers, and mushrooms. Stir-fry for 2–3 minutes until just tender.

Add the sliced green onions, and stir-fry for another 2–3 minutes.

Return the cooked beef to the wok. Add the cooked noodles. Pour the prepared sauce over the mixture. Toss everything together until well combined and evenly coated with the sauce.

Divide the ground beef chow mein among plates or bowls. Garnish with extra sliced green onions or sesame seeds if desired. Serve hot and enjoy!
