2 cucumbers, thinly sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh mint leaves, chopped
2 tablespoons olive oil
1 tablespoon white wine vinegar
Salt and pepper, to taste

Preparing the Vegetables
Thinly slice 2 cucumbers and ¼ cup red onion, then place them in a serving bowl.

Adding Fresh Herbs
Sprinkle in ¼ cup chopped fresh mint leaves and toss gently with the cucumbers and onion.

Making the Dressing
Drizzle with 2 tablespoons olive oil and 1 tablespoon white wine vinegar. Season with salt and pepper to taste.

Tossing and Serving
