For the Kabobs
1 lb pork tenderloin, cut into 1-inch pieces
2 large apples (such as Granny Smith or Honeycrisp), cored and cut into 1-inch chunks
1 red onion, cut into chunks
1 red bell pepper, cut into chunks
1 cup button mushrooms
1 tbsp olive oil
Salt and pepper to taste

For the Honey Mustard Sauce
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1 teaspoon minced garlic
Salt and pepper to taste
1/2 teaspoon dried thyme (optional)

Making the Honey Mustard Sauce
In a bowl, whisk together ¼ cup Dijon mustard, ¼ cup honey, 2 tablespoons apple cider vinegar, 1 tablespoon olive oil, and 1 teaspoon minced garlic until smooth. Season with salt and pepper to taste and add ½ teaspoon dried thyme (optional) for extra flavor. Set aside, reserving a portion for brushing and another for serving.

Preparing the Kabobs
Core and cut 2 large apples (Granny Smith or Honeycrisp) into 1-inch chunks. Cut 1 red onion and 1 red bell pepper into similar-sized pieces, and prepare 1 cup button mushrooms. In a bowl, toss the vegetables and apples with 1 tablespoon olive oil, salt, and pepper to taste. Add 1 lb pork tenderloin (cut into 1-inch pieces) and toss lightly to combine.

Assembling the Skewers
Thread the pork, apples, onion, bell pepper, and mushrooms onto skewers, alternating ingredients for even cooking and a balanced look. Leave a little space between pieces so heat can circulate.

Cooking the Kabobs
Preheat a grill or grill pan to medium-high heat. Place the skewers on the grill and cook for about 10–12 minutes, turning occasionally, until the pork is cooked through and lightly charred. During the last few minutes, brush the kabobs with some of the honey mustard sauce to create a flavorful glaze.

Serving
Remove the kabobs from the grill and let them rest briefly. Serve hot with the remaining honey mustard sauce on the side for dipping.
