Ingredients

For the Dough
2 ¼ tsp active dry yeast
1 tsp sugar
1 cup warm water (110°F/45°C)
2 ½ cups all-purpose flour
2 tbsp olive oil
1 tsp salt

For the Chicken
1 lb chicken breast, thinly sliced
2 tbsp Thai sweet chili sauce
1 tbsp soy sauce
1 tsp fish sauce

For the Toppings
1 tbsp olive oil
1/4 cup Thai sweet chili sauce
2 cloves garlic, minced
1 red bell pepper, thinly sliced
1 small red onion, thinly sliced
8 ounces mozzarella cheese, shredded
Crushed red pepper flakes
Fresh basil leaves

Instructions

Make the Dough

In a bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes until frothy. Add flour, olive oil, and salt. Knead until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.

Prepare the Chicken

Marinate chicken in Thai sweet chili sauce, soy sauce, and fish sauce for at least 30 minutes. Then sauté garlic in olive oil, add the chicken, and cook until done. Set aside.

Assemble the Pizza

Preheat oven to 475°F (245°C). Roll out the risen dough and place on a pizza stone or baking sheet. Spread Thai sweet chili sauce over the base, then add cooked chicken, sliced bell pepper, onion, and mozzarella.

Bake and Finish

Bake for 12–15 minutes until the crust is golden and cheese is bubbly. Top with fresh basil and optional red pepper flakes. Let cool slightly, slice, and serve.

Mix the yeast, sugar, and warm water in a bowl. Let it sit for 5-10 minutes until frothy.

In a large bowl or stand mixer, combine flour, olive oil, salt, and the yeast mixture. Knead until the dough is smooth and elastic.

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

In a bowl, mix the chicken with Thai sweet chili sauce, soy sauce, and fish sauce. Marinate for at least 30 minutes.

In a pan, heat olive oil over medium heat. Add garlic, then the marinated chicken. Cook until the chicken is done. Set aside.

Roll out the pizza dough to your desired thickness and place it on a pizza stone or a baking sheet.

Drizzle the Thai sweet chili sauce over the prepared dough.

Spread the cooked chicken, bell pepper, and onion over the dough. Sprinkle with mozzarella cheese.

Sprinkle with mozzarella cheese.

Bake in the preheated oven for 12-15 minutes or until the crust is golden and cheese is bubbly.

Once the pizza is out of the oven, sprinkle fresh basil leaves on top. If you like it spicy, sprinkle some crushed red pepper flakes.
