Thai Chicken Basil Pizza

Marinated chicken in Thai sweet chili, soy, and fish sauce joins red bell pepper, red onion, and mozzarella on the rolled-out dough, creating a savory, melty topping. For the Dough
2 ¼ tsp active dry yeast
1 tsp sugar
1 cup warm water (110°F/45°C)
2 ½ cups all-purpose flour
2 tbsp olive oil
1 tsp salt

For the Chicken
1 lb chicken breast, thinly sliced
2 tbsp Thai sweet chili sauce
1 tbsp soy sauce
1 tsp fish sauce

For the Toppings
1 tbsp olive oil
1/4 cup Thai sweet chili sauce
2 cloves garlic, minced
1 red bell pepper, thinly sliced
1 small red onion, thinly sliced
8 ounces mozzarella cheese, shredded
Crushed red pepper flakes
Fresh basil leaves

Make the Dough
In a bowl, combine warm water, sugar, and yeast; let sit 5–10 minutes until frothy. Add flour, olive oil, and salt, then knead until smooth and elastic. Place in a greased bowl, cover, and let rise 1 hour in a warm spot, or until doubled in size.

Prepare the Chicken
Marinate chicken in Thai sweet chili sauce, soy sauce, and fish sauce for at least 30 minutes. Heat olive oil in a skillet, sauté garlic, then add chicken and cook until done. Set aside.

Assemble the Pizza
Preheat oven to 475°F (245°C). Roll out the risen dough and transfer to a pizza stone or baking sheet. Spread Thai sweet chili sauce over the base, then top with chicken, sliced bell pepper, onion, and mozzarella.

Bake & Finish
Bake 12–15 minutes until crust is golden and cheese is bubbly. Garnish with fresh basil and optional red pepper flakes. Let cool slightly before slicing and serving.
