4 sweet potatoes
1/3 cup fresh thyme leaves
3 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon red pepper flakes

Preparing the Sweet Potatoes
Preheat your oven to 425°F. Wash and peel 4 sweet potatoes, then cut them into evenly sized cubes (about ¾–1 inch) so they cook uniformly.

Seasoning
In a large bowl, toss the sweet potatoes with 3 tablespoons olive oil, 4 cloves minced garlic, ⅓ cup fresh thyme leaves, 1 teaspoon salt, and ½ teaspoon red pepper flakes until evenly coated.

Roasting
