Thyme Roasted Sweet Potatoes

Ingredients

  • 4 sweet potatoes
  • 1/3 cup fresh thyme leaves
  • 3 tablespoons olive oil
  • 4 garlic cloves
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Peel and slice the sweet potatoes into about 1 inch thick slices.
  2. In a large bowl, combine the potato slices with olive oil, garlic, thyme, salt, and red pepper flakes.
  3. Line a baking sheet with parchment paper and arrange the coated sweet potato slices in a single layer.
  4. Place baking sheet on the top rack of a 450 degree oven and roast until tender and slightly browned in about 40 minutes.

Use about 4 potatoes to fill a large baking sheet.

Peel the skin from the potatoes.

Slice into about 1 inch thick pieces.

Chop 1/3 cup of fresh thyme leaves.
