Ingredients

4 sweet potatoes
1/3 cup fresh thyme leaves
3 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon red pepper flakes

Instructions

Prep the Oven & Pan
Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

Season the Sweet Potatoes
In a large mixing bowl, combine garlic, thyme, olive oil, salt, and red pepper flakes. Add sweet potato rounds and toss until fully coated.

Roast
Arrange sweet potato slices in a single layer on the prepared baking sheet, making sure they don’t overlap. Place on the top rack of the oven and roast for 35–40 minutes, flipping once, until tender and golden brown.

Finish & Serve
Transfer roasted sweet potatoes to a serving dish. Garnish with fresh thyme or sprinkle with crumbled feta for extra flavor. Serve hot as a side dish.

Use about 4 potatoes to fill a large baking sheet.

Peel the skin from the potatoes.

Slice into about 1 inch thick pieces.

Chop 1/3 cup of fresh thyme leaves.

In a large bowl, combine the potato slices with olive oil, garlic, thyme, salt, and red pepper flakes.

Line a baking sheet with parchment paper and arrange the coated sweet potato slices in a single layer.

Place baking sheet on the top rack of a 450 degree oven and roast until tender and slightly browned in about 40 minutes.

Let cool a few minutes and serve.
